Our typical process goes as follows:
- You call or email us about availability of the product you are looking for.
- We will need a specification sheet (if available), timeline, packaging requirements (drums, totes, etc), approximate volume needed, etc
- We will check our availability on the product requested and provide you with pricing, specifications, MOQ, FOB, and lead times.
- If all meets your needs, you can request samples at this time. To order samples we will need your shipping account info and we will send you tracking number within 24-48 business hours.
- Once you have approved pricing, specifications, sample (if used) then you can submit a Purchase Order to [email protected].
- If you have established credit and terms with OSFS, then we can provide freight rates and once approved, process your order.
- If you are new or have not established terms and credit with OSFS, we will send you a Pro-Forma invoice for the product and freight (if we are securing freight) and once paid, we will process your order.
- Once shipped, we will provide you with BOL & COA

What is Finish? Finish describes the texture of tomato paste. The texture refers to the amount of peel, seed, or core material (insoluble solids) remaining in the juice before it is concentrated. More solid material gives a coarser finish. Minimal seed and peel results in a smoother finish.
Why is finish important? Finish is a key factor for both the yield and the texture of your final product. The quantity of insoluble solids significantly improves ingredient yields, while the texture adds to the mouthfeel of your final product.

A finisher screen begins as a sheet of metal. Holes are drilled or punched through the sheet. The sheet is cut, then shaped into a cylinder. Screens are identified by the diameter of their holes.

It depends on what the finished product will be. If you are making tomato based drinks, soups, tomato juice, or frozen entrees, we recommend cold break paste. If you are making BBQ sauces, dipping sauces, ketchup, pizza sauce, and pasta sauce then we recommend hot break paste. See more details between the two below:

- Temperature treated at 60-70 degrees Celsius
- Typical NTSS is 31-37%
- Typical Screensize is 0.027", 0.033", 0.060"
- Typical Viscosity (Bostwick) is 6-12 CM
- Recommended for low viscosity tomato juices and sauces
- Low pectin content
- Preserves tomato flavor and color
- Cold Break heats the tomato after it is beat down.
HOT BREAK
- Temperature treated at 90-98.8 degrees Celsius
- Typical NTSS is 26-31%
- Typical Screensize is 0.033", 0.045", 0.060", 0.090"
- Typical Viscosity (Bostwick) is 2-6 CM
- Recommended for high viscosity products such as sauces, ketchup, purees.
- De-activates pectin and increases consistency and viscosity.
- Hot Break heats the tomato before it is beat down.

All of our Sundried Tomatoes are prepared from clean, wholesome, red, mature fruit. The tomatoes are washed, machine cut and carefully laid on redwood drying trays, treated with salt, then dried in the warm California sun. The tomatoes are then processed to order, however the drying process consists of sunlight only.

The biggest difference between Single Strength Crushed Tomatillos and Concentrated Crushed Tomatillos is the Brix. Single Strength has a 5.5 minimum Brix and Concentrated Crushed has an 11.0 Minimum. We recommend to our customers that if they can use the concentrated crushed tomatillos, they can simply dilute to their preferred Brix. This saves money too!
We have several options for Tomatillos. All of them can be tailored perfectly to give you just the right finished "roast", color, and flavor. Our customers regularly blend our IQF at 15% or even 10% IQF to 85-90% Aseptic Crushed Tomatillos. This gives a perfect roast with the freshest possible tasting product.

You, or your customer will be responsible for breaking down your bins and properly stacking/strapping them for secure shipping. Upon receipt of the bin parts to our processor plant, One Source Food Solutions will remit a monetary credit per bin. There is usually space on a truckload for 160 bins which yields a bin deposit of approximately $8,000-$9,000. We have very detailed instructions for stacking and shipping these to ensure you efficiently and effectively get the most out of your bin returns.

Bulk/Aseptic Paste in Drums is 31% NTSS (Natural Tomato Soluble Solids), and canned/pouch paste is often 24% NTSS. This is one of the variables that can affect the price/lb. It also means that the thicker paste (31% NTSS) can be watered down to get to the 24% without paying for the extra "water" to ship across country. When you convert the 31% to 24% the pricing may work to your benefit.

It depends on what is in the drum, but as a general rule Diced Tomatoes are approximately 465lbs/drum, Paste is 540lbs/drum, Purees 480lbs/drum. Drum weights vary slightly. We supply a COA (Certificate of Analysis) with net weights per drum. Billing is calculated based on the net weight of each shipment and will vary slightly. We must ship 4 drums per pallet, and depending on the MOQ of the product you are ordering, we can quote you Full Truckloads (FTL) of 76 drums, or Less than a Truckload (LTL) at 12 drums, 24 drums or 48 drums .

Although product, packaging or freight claims are rare, the timely resolution of claims is important in reducing any disruption to your business. With the help of our suppliers, we investigate the submitted claim information, including lot codes, pictures, and customer’s observations. We report QA findings and corrective actions. Then we follow the claim through to the credit memo is issued.

Product shelf life of UNOPENED and SEALED tomatoes in drums/bins is a minimum of 2 years (24 months), stored at ambient temperature in original, unopened containers.
Once the sterilized aseptic bag has been opened, the shelf life is void and the product must be used immediately upon opening.

If it is just diced tomatoes, we can usually scale 84 drums (21 pallets and approximately 39,000lbs Net / 42,700lbs Gross), and depending on the carrier's equipment, 88 drums (22 pallets and approximately 40,850lbs Net / 44,700lbs Gross) will often times work as well. The easy answer is 21 pallets, but we can always try for another pallet if needed!

Citric Acid is used, if needed, to manage finished pH levels. As such, it is normally considered a processing aid rather than a preservative. Here in the US, it can be legally excluded from labels because it meets the following criteria:
- It is added to the food, but gets converted into a substance already present in the food.
In addition, tomatoes have three naturally occurring acids: 1. Citric Acid; 2. Ascorbic Acid (Vitamin C); and 3. Malic Acid.
Adding citric acid to pizza sauce is the most cost effective way to control pH for a safe and acceptable antimicrobial pH range of 4.00-4.25

We supply tomato paste in various packaging formats. If you are in foodservice or retail we recommend the 6/10 CANNED Fancy Tomato Paste, 24/26%NTSS or the 6/111oz POUCH Fancy Tomato Paste, 24/26%NTSS.
If you can handle larger packaging sizes, we also carry Tomato Paste in 55G Drums and 300G Tote Bins for our Industrial buyers. The price per pound is lower on the industrial sizes, however, once a drum or bin is opened, the product must be processed immediately to prevent spoiling.
