Canned tomato puree is defined in the Standards of Identify for Tomato Concentrates. It must contain a minimum of 8% natural tomato soluble solids (NTSS). The USDA goes on to define puree concentrations as shown:

  • Light Puree: 8% to 10.2%
  • Medium Puree: 10.2% to 11.3%
  • Heavy Puree: 11.3% to 15.0%
  • Extra Heavy Puree: 15.0% to 24.0%

If I had to choose one thing that was my favorite aspect of working with One Source Food Solutions, it would be professionalism.
